White Asparagus Soup With Salmon
Creamy white asparagus soup with a delicious addition of smoked salmon!Ingredients:
- 1 lb white asparagus, trimmed and chopped
- 1 large potato, peeled and chopped
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 1 cup heavy cream
- 4 oz smoked salmon, chopped
- Salt and pepper, to taste
Instructions:
- In a large pot, sauté the onion and garlic until translucent.
- Add the white asparagus and potato to the pot and sauté for a few minutes.
- Pour in the vegetable broth and bring to a boil.
- Reduce the heat and let simmer until the vegetables are tender.
- Puree the soup with an immersion blender or in batches in a regular blender.
- Stir in the heavy cream and season with salt and pepper to taste.
- Serve the soup hot, topped with the chopped smoked salmon. Enjoy!
