White Asparagus Soup With Salmon

Creamy white asparagus soup with a delicious addition of smoked salmon!


  • 1 lb white asparagus, trimmed and chopped
  • 1 large potato, peeled and chopped
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 cup heavy cream
  • 4 oz smoked salmon, chopped
  • Salt and pepper, to taste


  1. In a large pot, sauté the onion and garlic until translucent.
  2. Add the white asparagus and potato to the pot and sauté for a few minutes.
  3. Pour in the vegetable broth and bring to a boil.
  4. Reduce the heat and let simmer until the vegetables are tender.
  5. Puree the soup with an immersion blender or in batches in a regular blender.
  6. Stir in the heavy cream and season with salt and pepper to taste.
  7. Serve the soup hot, topped with the chopped smoked salmon. Enjoy!
